I don't own either car but I have spent quite a bit of time in both. I would say the interior quality of both is about the same in both cars. They both feel very solid and well built. The only advantage the LS500 has is the Kiriko glass and the stitching of the seats. I saw an LS500 at work with a really cool stitching pattern on the seats.
I will say that I prefer the steering wheel of the LC over the LS. The layout on the LS500 steering wheel is too crazy for me.

I own an LC, and have been inside a new LS a few times. It appears the interior LED lighting in the LS may be brighter and whiter, but I'm not sure. I haven't seen both side-by-side. Can you check it out? I would love to swap the LED modules in my LC with whiter, brighter modules. Unfortunately, aftermarket LED bulbs are not compatible with the new modules being used by Lexus. So, I'm hoping as newer models are developed, we might be able to swap out out the stock LC modules for other, better LED modules. I'm guessing the LS modules will swap easily into the LC fixtures(?).
The only interior lights that I could upgrade so far are the visor bulbs, since those were traditional incandescent plug-in bulbs. See pic here:
