How do you disable the shift "beep"? Any ideas?

you mean the beep when you are at redline?

Unfortunately there's no way to disable the audible upshift or downshift tones.

Default I had the shift beep on my 2007 is 250 now gone ?

I have seen the 5th gear video. Seems like Tiff needell was in 'sport' mode shifting, not in full manual? I could be wrong but i think the downshift limit differs between 'sport' shifting and full manual.
