Quick question about winter tires
If I am to throw a set of 225 55 R 17 on for the winter. Will this be a problem? Will it rub?

For snow tires you'd be better off with 205-55-17s (not sure if that size even exists, too lazy to google)
My BMW 740 originally came with 235-60-16s, I run 215-65-16 snows.

Why would the less width be better?

Better bite in the snow. Narrower tires give much better grip in snow.

^ +1..You will be ok on OEM rims but if your getting dedicated rims/tires go for traction not looks.
