I watched the video and..... nah. I'll let the stealer do it if it ever needs to be fixed.

Can only the thermostat be changed out without buying the whole tube housing assembly?

There are several different torque spec for the bolts. You can find the information in the DIY thread.

It appears it is just locked in place by the 2 plastic tabs on either side. idk

where is the DIY link for the waterpump?

And is there a coolant bleeding procedure or just refill and drive?

In the DIY sticky thread on the 3rd Gen GS forum main page.

Yes, there is a procedure to refill/bleed the radiator. Someone just posted the instructions in a recent thread. Do a forum search and you should find it.
