How come I never, ever see any es350 2010+ with wood steering wheels, rear shade? But in 2007-2009 they are on most of them. Every single 2011 I have looked at has no wood steering wheel, and no rear-shade, and no air-conditioned seats.

Are these things that were removed?

I had a 2010 which had all of these. I thought they were fairly common features.

My 2010 has a wood steering wheel. I don't have the rear shade option.
But I have ceramic tint, no big deal.

My aunt had a 2010, she had both the wooden wheel and rear shade. Otherwise we had all the same options.

My aunt now has the 2014 and has the wood wheel and rear shade.

I just purchased a 2010 and it has the wood steering wheel and rear shade. It practically has everything except H.I.D. headlights. Which blows my mind! All of this and the buyer left that option out?????? Lol

Mine has both. You may have run into some that weren't ordered with those packages.

for some reason here in canada, they are very common on the 2007-2009 cars, but on 2010 i have yet to even see 1 with a wood steering wheel and rear shade, and a/c seats

Canada and US cars have different standard equipment (base) cars, and different option packages. Canada got very few individual item options. I have the sales brochures for Canada cars for the model years 2009, 2010 and I own a 2011. The Canada "base" cars in the aformentioned years have no "wood" steering wheels or rear sunshade etc. The first option package was "Nav" that basically added a couple of "goodies" like heated AND ventilated seats. The "Premium with NAV" package added the "wood" steering wheel, both front seats/outside mirror memory, HID (and Adaptive Front Headlamps), sunshade, front seat cushion extensions, Park Assist etc. The "Ultra" package added Mark Levinson sound system, "premium leather" seats, and the Panorama Roof along with different chromed wheels. When I bought mine in June 2011 there was a "Sport" option that was a "base" car with the rear deck spoiler, and the same wheels that came with the chrome wheels of the "Ultra" package. Here in western Canada I believe that one sees more "wood" steering wheel cars, than not. May be different in the east.
