Default 2001 rear calipers

How the heck do I remove the calipers?

I have the one bolt out and it pivots but I can not slid it in or out.

They're supposed to slide off. If they don't then they are seized. I used a drift and a mini sledge hammer when I had this problem.

What was the best spot to pound?

I have been pounding a while.

I have not wanted to take my torch to heat it. because the brake line is so close.

Pivot the caliper upward and then pull off. If you can't do this the slide pin has seized. You may have to remove the bracket from the backing plate (caliper still attached) then you can work with it on the bench.

I use a large flat screwdriver to pry the calipers away from the rotor.

I remember now. I disconnected the brake line, unbolted the bracket and removed the whole rotten mess. The new calipers came with everything needed. Didn't put a whole lot of effort into freeing them up, I was afraid of breaking or warping something.
