From a technical perspective why is a key fob more secure than a smart phone.

It's just a personal preference.
I come from a world of very expensive machines so that may bias me a little.
No software coupling to the OEM for machines to run, my cardinal rule. Lol 😄

What happens if your phone dies and you don't have the fob or card or whatever? Locked out?

The phone has to be REALLY dead for NFC not to work. You just hold the phone up to the door and go the ignition and it will still work.

The only times it doesn't work is if you intentionally turn your phone off; or if the phone dies and then you don't charge it for several weeks, such that it can no longer even tell you that it's dead.
That said, how often does your phone die? I think the last time it happened to me was 2016 or so.
