Default Wheel fitment per lowered GS

I have a question for you guys. I am new to this link but I like it a lot. I lowered my GS on L-tuned struts with intrax springs. I like the drop. I get a lot of compliments. But the problem is: the drop was a 1.5 drop and then it settled, so it sits pretty low. I just brought 19x8.5 all the way around with an offset of 32mm. Can you explain to me what the offest means? Is this the hole diameter of the lug nuts? I don't want to lift my car but I might have to. I definetly like the look of deep dish wheels tucked under the fender. I know my front should fit and clear fine but what do you think about the rear. Would I have to shave the fender? And if I have passsenges in the rear plus going over speed bumps, am I in any clearance with the fender or will there be damages to be concerned about. I have not yet set the wheels on the car yet. I am tring to collect more data from everyones response wheither I need to lift /raise the back. Your responses would be a great solution to my problem!
