Look in to powder coating them, I just did mine in the last month and with the rebuild kits cost me 120 ish for all 4
It's hard to beat the durability of powder for calipers.

I think a bronze or gold is would look good on white but I am a sucker for typical colors on calipers also remember the lighter the color the higher maint which is something else to consider.
I just settled on red as my car is black on black on black so calipers pop well with the red on the tail light.

I went with black and white vinyl. I got OEM rebuilt parts that were beginning to rust so I needed to do something with them. I used a steel wire brush with a lot of CLR to remove the oxidation and then I used a black Duplicolor primer and black Duplicolor base paint. After the base coat dried for a while (a day at least), I applied the vinyl and topped it with a clear coat. About a $35 dollar job but took me about 8 hours total. Would go much quicker if you had a lift.
