I noticed on some coilovers, some have camber plates, and a few of them don't,,, Could you actually get some massive camber with the plates? Or do you have to get a control arm?

depends on the car... if a car has a strut type setup, where there is no upper control arm and the strut provides for the steering knuckles upper attachment point, then a camber plate on a coilover will actually change camber to some degree... if a car has an upper control arm, like the is300's, then a camber plate would be useless...

The rear can be adjusted to - 2-3 degrees of camber with the factory camber bolts.
