If you remove it, the automatic air systems pumps hot air constantly. You can still use manual mode, but as soon as you turn the temp from COLD to 65deg, it starts blowing heat.
In case you're wondering, yes I tried it. Trial and error.

I think its a solar sensor--also for the climate control. It is used to tweak the gain on the temp control when set to auto. i.e. really hot sun, it ramps up the fan speed slightly, etc. Its designed to compensate for the difference in human perception between 72 degrees in the shade v.s. 72 degress in the sun.

do-luck,
NO...the AC just relies on that sensor... if it is not plugged in the A/C assumes the car is FROZEN.
If your sensor is not functioning... pull off the ignition surround off, then the leather dash piece around the key hole... carefully check if the sensor is both plugged into the 2-wire black harness AND the air flow tube from the dash.

resister
If you replace the aspirated (cabin air is "sucked" over the sensor)sensor, thermister, (that's what's behind the ventilation louvers shown in the picture) with 2.4 K ohm resister the system will "think" it's 72F ALL the time and you can control the outlet air temperature by how far you move the setpoint above, for heating, or below, for cooling.

Cool Trick WWest.
I found two parts that sound like the thermister you described above.
Air Conditioner, Automatic Temperature Control Components, Ambient Sensor, Sc300, Sc400 $47.96 List
Air Conditioner, Automatic Temperature Control Components, Inside Air Sensor, Sc300, Sc400 $21.10 List
Also found the black dash sensor
Air Conditioner, Automatic Temperature Control Components, Solar Sensor, Sc300, Sc400 $41.99 List
If you call youknowwho@youknowwhere.com you will probably get the thing replaced for cheaper than the resistor effort
