AEM v2 Idle Timing

AEM v2 Idle Timing
Back again with another AEM question. I'm still learning this stuff so bear with me.
I have FIC1100's with BC 272s. I got it to idle kinda ok. My big problem now is that when I rev it a bit, the idle hangs way up there around 2000 RPM. I can get it to "come down" by letting out the clutch and mechanically bringing it back to where it's comfortable idling back in the 800rpm area. What am I doing wrong? Any tips? If I bring the idle back down by reducing the idle vs target table I then run into stalling issues when I let off the throttle.
Also, what ignition values do you guys idle around? The motor seems to like 27ish degrees at idle now and it used to like quite a bit less when I had stock cams. Is this just how it works?
