1UZ into a SC300????
It seems that making a 400 into manual is a bit of a hassel, but has anyone ever thought of, or have actually swapped a 1uz into an already manual 300?? Would it be as simple as getting the adapter plate, motor mounts and CPU??

You need more than the adapter. See link
Just because the SC300 is manual already, that means you HAVE the driveshaft, tranny, clutch pedals... but you still need everything else.
I think you should look @ that link first and then post back. That should give you the understanding of how to do the swap...
