Oil level
So i bought an NX 3 weeks back and I just checked my oil level today. I don't know if I'm reading it right but when I checked the stick, (pull out wipe, put back and pull out) the oil level seems to be super high, way above to second dot. The car sat for a little under 3 hours after a short drive.

I'm not quite sure what you're red line is for. Is that where the oil is for you?
Do you have experience checking oil?
Your picture doesn't exactly give a clear image where the oil is. By waiting 3 hours, its hard to say what your real oil level is as most the oil in the motor has returned to the oil pan. The point of starting the car to get it to temperature then shutting off is because all the required oil is now up in the valve covers (I guess singular for this motor lol) and in the motor, and the "needed reserve" is in the oil pan.
So let the car sit overnight, let it cool off. Start it, drive to work or into town or whatever, then shut it off, come back 10 minutes later and check it again, you will see the level much lower.
Also, see page 492 of your manual.

Then if I had to guess, I would say either they overfilled it or they put MORE in it to account for blowby during break in.
I honestly don't have a good answer for you, so I would recommend you call your service department, ask for someone specifically that has worked on NXs previously, and mention it to them.
