Default how low can it get before car overheats??

I have a small leak in my coolant sensor area. Every once in like a month or longer, the coolant level drops below the second line (low coolant level) when checking the car cold in the morning (you'd probably know what i'm talking about by second line if you've seen a coolant reservoir of first gen LS400). A week ago, I lent my car to my father, and he said after about an hour of driving, the low coolant light came on and five minutes later it went off. The next morning I checked coolant level and it was about no more than an inch below the low coolant level line (2nd line).

Now here is my question: could that much low coolant level cause the car (engine) to overheat? Or better yet, how much coolant should be lost for a car to begin to overheat?

(he didn't look at temp gauge at all, so he doesn't know.. )

Honestly, I don't know. I did have the coolent housing replaced on my 1992. Besides being messy, I was told that it could lead to the altornator and other things going out.
I guess I am lucky, I have a guy that works on my car that used to work for lexus. Now he moonlights out of his garage.
