How an LS is supposed to drive? Advice needed please

Congratulations on your success to fix.
So it was Legender who's advise was most effective.

I'd say an old LS needs to change ECU electrolytic capacitors since those contain infamous liquid called QAS and leak when aged. It damages and eat copper traces badly. If not leaked yet, the change mostly recovers the performance a lot too.

Thanks Yamae! If it wasn't for the information you provided I wouldn't know where to start with all the little issues the car was displaying.
