Default Big stereo replacement, less miles on full tank.

I've just changed the complete stock stereo with new headunit, component speakers front and back, sub and amp. This setup will of course need more power than stock stereo, so the generator has to produce more than usual which will make the engine use more energy to run the generator. Though it's quite cold here in Denmark (Europe) at the moment (30 Fahrenheit)
I went from going 370 miles on a tank to now 285! About 4 months ago I changed the ECT sensor. And furthermore I did a tune-up about 6 months ago with timingbelt + waterpump, plugs and wires, distributors and rotors, airfilter, gasfilter, oil and filter and so on.. My driving patterns are the same.

Has anyone experienced bad gasmileage and how much, after they did a complete replacement of the stock stereo?

I think there is some coincidental issue that has popped to change your gas consumption. An audio system unless it was quite heavy isn't going to hit you that hard. Even electrically speaking in most cases. Now if say the audio positive lead wire is hooked into the ignition coil pack line, it may be a different tune.

Could be a high resistance ignition wire, failing plug that causes this. Could be other areas as well. Check the usual suspects is best you can try.

at the moment 30 degree Fahrenheit. We measure in celcius here . I know that it will use more gas when the weather is cold but going from 370 miles on a tank to now 285!

that actually sounds about right, freezing temperatures will sap an engine of it's efficiency.
