Default Hestitation on Flooring

Gotta love the V8 Engine, but sometimes when I'm entering the highway, I need a lot of accleration very fast. Houston driving is crazy sometimes. Anywaz when I'm pressing the acclerator the pedal gets sticky (guess I need to get the throttle cleaned) sometimes, so I press it harder and it gets unstuck and I'll accidentally floor the car. Well when I floor it the car hestitates, and the RPM needle jerks from 3 to 5 and back and forth....like it's going nuts. Of course I can't let go of the pedal cause someone shooting in at 80 I gotta get it to pick up. So I ease of the pedal a little bit, and try to accelrate slowly. Anyone have any ideas on what it can be? And the stickness mean I have to get the throttle body cleaned, right, or am I mistaken?
