225/35 front and 245/35 rear is pretty meaty for those sizes, but on such narrow wheels probably your best bet for retaining a lot of sidewall.
alternatively you can try going 245/35 all around, but it'll look funny on an 8.5" rim and will rub in the front wheel well. 225/35-20 would work all around but only if you really needed to stretch in the rear, which you will not (at all) need to do.

that will fit with a minor roll. our cars can handle single digit offsets with very minimal fender modification. of course as mentioned it also depends on size of tire, and amount of drop. you will need high disk up front but a 15mm spacer can help with fitment at the offset you mentioned. what wheel? i can guesstimate the disk if it will clear your brakes or not.
