Default Mini - desktop (ITX Micro ATX) in a LS430?

A friend of mine brought up an interesting idea of putting a Mini-desktop in his car (Maxima) for his engine tuning and multimedia purposes. He tracks this car, which is why he wants a mini-system to run full-time in his car. I've been toying around with the idea because I have built plenty of desktops in the past. I could build a nice machine for under a grand, and have been wondering about the possibility of using the OEM Navigation screen for this purpose. I would have to use some kind of KVM switch, because I do not plan on losing Navigation / OEM switches. I would be using this primarily for multimedia purposes, and possibly web surfing while in the car (Not in motion of course).

Before I go taking apart the dash, Has anyone attempted a task like this? and if possible, what connections would I need to bypass the OEM Navigation and would the touch screen capability work on systems such as OS X or Windows 7.

PS: If this WAS possible, mounting would be in the trunk, most likely mounted on the left of right of my sub box making sure it had enough airflow in the system.
