for stereo you basically want a low gauge cable with a very high strand count the stuff i run the strands almost look and feel like cloth. a high strand count makes the cable more flexible and lessens the chance of somehow the strands inside the shielding to break apart and cause a spark which in turn causes heat you get the idea it is not a good thing.

hdmi's are a little different. over a shot distance the cheap ones vs the expensive ones there is little to no loss. once you get into big lengths the short onces start experiencing data loss aka quality loss due to i think their resistance.
