Does the minimal amount of tire sidewall create an overly harsh ride? What about potential rim damage with potholes etc? I'm currently debating 19's versus 20's, are these valid concerns? I would much prefer 19's, but all of my favorite wheels are 20's.

Haha thank you! The ride quality is actually pretty good. Obviously not as good as stock but I hardly noticed a difference.

I think those are totally valid concerns. You just have to be super careful. You'll be able to get away with higher profile tires if you go with the 19's if that gives you piece of mind.
