Default Brake Light Issues

This has been going on for about a week now. I have a MY 2011 with 80k miles. Whenever I start the car and release the parking brake, the brake light stays on for about 200 feet of driving. A few times when I was on the highway going over bumps that make the car have that "flying" feel, the light will come on again for a few seconds.

Anyone ever have this occur?

Have you checked your brake fluid? The same light used to indicate that the parking brake is on is also used to indicate that the brake fluid is low. And that usually that happens due to normal brake pad wear. I would check both brake fluid level and pad thickness.

+1 to checking brake fluid. Especially if it comes on over bumps, that would be the fluid level being close to the trigger level.

Once the fluid level is checked and is known good, you might need an adjustment in your E-brake cable.
