Not sure if anyone is still active in this thread, but I do have a question, as I am going through a problem with this conversion myself. I thought it was plug and play
If I do change the hood to an aftermarket isf hood, I wouldn't need to do any cutting on the isf fenders?

It has been several years since I've looked into this, but from my recollection, the ISF hood and ISF fenders stick out further than that of the 250/350 by about 2" or so. I believe you would have issues with the hood latching down on your car unless you modify the location of the hood latch.
If you are using a carbon hood though, maybe you can just use hood pins instead of a hood latch since you technically need to use hood pins with carbon hoods anyways.
Side skirt may need to be the ISF ones to fit on, but check out this other post too as there are many links here that may help you with your questions:

I almost want to say they sell conversion kits for the regular 250/350 to become an ISF without having to modify the panels or hood. I can check Google later once I'm off work, but I would say look there if you haven't purchased the hood already.
