This should be entirely up to you. Same thing can be said for an exterior color. It's your car, what are your personal tastes? What makes you happy? What would you like staring at for the next few years as you drive?
As far as maintenance goes, every single color of leather offered will collect the same amount of dirt. Do you want to see the dirt and clean it off or do you just want to sit on it while it breaks down the leather over time? I rather know it's there so I can clean it and keep it from breaking down the material.
Also keep in mind you get different color woods with each interior color option. That might have a bearing on what you want to choose.

In 2008, they changed the carpets of the beige interior to black. I hadn't heard they changed them back to beige?

Grey gets a bad rap because for the last 20 years it's been the color of choice for rental cars. And rental cars lend a plain and generic feeling. I'd sum up by saying black is sporty, beige is luxurious, and grey kinda of falls in the nondescript catagory.

I have gray, and love it. My exterior is Tungsten Pearl, so Cashmere wasn't a choice, and I didn't want black.

I have a white on black IS and I love it. The black interior does get very hot when the sun directly hits the seat, so I tinted the windows and put up a sun shade when I park. Maintenance is pretty easy, since most marks don't show up on the seats, but when I use my leather cleaner on the seats once a month, the bright orange towel does become darker orange from dirt and grime.
