I am looking at a set of SSR SP1s that is 19x8.5 +37, 19x10 +37. It seems like the traditional offset for these rims is +37 front, +43 rear. Should the +37 fit without rubbing or fender modification? I'm at stock ride height now, but probably will drop ~0.5" with coilovers in the future.

I personally think they'll require some sort of modtfication, whether it be raising the car, camber, or cutting/rolling fenders. The question now becomes what tires are you planning to get to fit these wheels. Some run stretched to make them fit, while others will say to camber it more so you don't deal with the rubbing. You'll be extending the outer rim by 30mm compared to the stock setup, which is a little less than 1 and 1/4 inches. But I've seen 19x10 in the rear, and +37 is a bit aggressive for me. In the end, it'll depend more on the tires when you get them. The fronts will have no problem at all.

Talking about the rear, 265/35/19 tires you should be fine to go with even 0.5" dropped.
