Default Sport/ Sport + mode at start up

anyway to set it up so it always starts in S or S+ mode so I don't have to always remember to do it.

Default I noticed that too

It starts up in Eco mode if I left it in that, but never stays in sport. However, that's a good thing as I'm trying to wean myself out of sport mode. My F150 is not supposed to be getting better gas mileage, ha.

It shouldn't start in Eco mode, however, it will bring up the Eco logo on the dash if you are in normal mode and driving economically. You should still have to actually select Eco mode as well, which tones down things other than the throttle response (like the a/c or heater as well) and shift points.

i turned off that damn eco light, it was incredibly annoying driving around and seeing it turn on and off all the time

In japan you can buy a module that can leave you in S+ mode but it's not worth the trouble installing.

I prefer it starts in Normal...that way once I've gotten on the road and the car is warmed up I can turn to S/S+ and pretend I hit the Nos button.
