Well, that's because you didn't properly disable TC. While totally stationary, hold down the TC button for more than three seconds until you get the TC light in the dash. This totally disables the TC and associated systems. At this point, you're free to slam the revlimiter (not that you should) all you want. I drive the car in this mode 98% of the time, as the TC system is very invasive.

I'll try it again tonight, but I've done this multiple times (holding down the button for 3+ seconds) and the car still auto-upshifts for me.
Speaking of TC. If I just press the button for the simplest disabling of TC, it turns itself back on after one launch. So dumb.

2. Are you in manual mode? (Silly question, but I had to ask).
The TC will turn off temporarily but just pressing the button quickly (or while moving) but will re-engage after 30mph. So if you didn't hold the button down for 3 secs and didn't get the TRAC light on the dash, it's going to auto shift after you launch due to being re-engaged after 30mph.
This quick TRAC disable feature is more for situations like getting stuck in sand/snow or going up a steep incline in the snow/rain.

I'll try again, maybe I thought I disabled it and I hadn't...but I know this has been a bother of mine since I bought the car and I've tried a number of things to get it to stop upshifting for me and haven't found anything that works.

i had a test drive today again with the IS 350 Fsport and got 0-60 in 6.8sec, it felt very slow, i did another 0-60 with my 2007 G35 and i got 5.8 (bad tyres). However, there is one thing, the test drive happened in the city of Dubai and here we have Dunlop tyres instead of Bridgestone Turanza + the temperature today was 122F , Do you think guys this will justify the 6.8sec? Please your advises

Read this article also which compares the acceleration timings of an IS300 before and after the break-in period. I know we all have our opinion on the break-in period and methods, so lets keep that aside.
