If you want it for a short term mod., go for it! don't expect it to last very long.
I figure that you will need to cover 100% your wheels. You leave parts of your wheels exposed to harsh elements, plastidip will start peeling . Wheels is not your regular plastidiped emblems/grills etc. which are stationary. Just my opinion.

I did it. 2 coats of plasti dip, 2 coats of gloss black, 2 coats of clear gloss. It is def a temp, mine lasted a yr or so until I had to get new tires (the machine messed up the edges putting the tires on). I have since bought new rims and have not yet tried to take the paint off the old wheels. I hear rubbing, a lot, with gasoline will eventually get it off but I've taken plasti dip off other things and it will most likely be a biznatch. Anyways, pics about 8 months after...
Right after I did them
It's all in prep and taking your time. Yes some people don't like it. O well. If you do then do it.

I personally think don't just plastidip the wheel but finish it up with some kind of paint. The plastidip will serve as a great primer. In the end you can just peel it off instead of having to strip it all. Looks good guys! Thanks for the photos and review!
