roll the fronts for +25? would a +30 F be able to avoid doing so?
as for the rear, rear fenders are rolled, car sits at 25" ground to fender front and rear. it seems like the rear should be fine with +30, but would a +25 R require me to do a slight pull or shave?

just to alleviate some of Vroomin350's workload as the designated 2is wheel fitment guru. 
the square set-up (19x8.5 +45 + 235/35-19) will fit without the need to modify your fenders. BBK clearance differs by manufacturer/wheel line, so you should probably check w/ forgestar to find out. however, don't expect this to be a flush set-up.
the staggered set-up (20x8.5 +32, 20x10.5+30) may require a roll in the rear, depending on tire size. given those you listed, you'll definitely need a roll in the rear - and you still may have clearance issues. this set is definitely more aggressive than the other set you listed, but you may need fender modifications and running narrower-sized tires to make this work.

with the staggered set-up, it's more so the tire than the wheel that'll cause clearance issues.

19x8.5+35 wheels all around. What would be the best tire size if i'm RWD and on a 2inch drop. Can i also run spacers in the rear since ? I was planning to have the front 245/35/19 just don't know what i should do with the rear tire size. I was thinking if its even possible to run a 25mm spacer in the rear so i can still have a staggered look to it. Can someone help me out?

Can anyone tell me if i will have any rubbing issues while running with this setup on an IS250 that is lowered with the Eibach Pro Kit (250)?

With your setup, Front will be minor rub with Eibach. If you don't want to rub, choose 225/35/19 OR go with 19X8.5 +35 with 235/35/19
Rear tire choice might be too wide to use with that rim spec. You need 255/35/19 to clear rear fender, and its gonna be a very close call.

I'm searching for a good wheel/offset and tire combo that will provide an aggressive look (close to flush, without tire stretch) without fender work, modifying the fender liners, or camber. I will hopefully being running coilovers with about a 1.5 finger gap for daily driving.
What offset and tires do you all recommend in a 19x8.5 and 19x9.5 sized wheel? Thanks!
