If you turn off the engine while rolling, won't the steering lock? If not, what system is in place that prevents it?
No, the steering doesn't lock until you open the door. The logic for the steering lock motor won't allow the steering to lock unless the door is opened.

Just listen, you can hear the electric steering wheel lock when the first door is opened after turning off the car. Surprisingly, opening the passenger door first (and perhaps the rear doors too, haven't tried) also locks the steering column.
^^^^You can drive the car forever without having the key in the car. But, if you stop it, or it stalls on its own, you wont be able to restart it again. The key must be in the car for it to start.
