I really like Cashmere, but everyone tells me NO. Get gray or black

Seriously, unless you are working at a construction site, your interior will stay pretty clean. Over time, (say one year) you will see some grime on the lighter leather surfaces, but any good leather cleaner or formula 409 or fantastic with a soft bristle brush or sponge will wipe it away. It's no different then having to wash the exterior car. If you spend a little bit of effort, it will look nice for a long time.
The cashmere with black exterior IMO is a richer look then the black on black, but I know many others feel differently. I had a loaner with black interior and it was a let down--just did not feel the same. I'm sure others feel just as strongly about the cashmere vs. black interior.
If you like the cashmere, get it. It's not to hard to maintain. One other suggestion, definitely get winter or clear mats to cover over your carpet--that's the only disadvantage to a light interior. Even if you are careful, the rugs and carpeted floor mats will look like crap, unless they are covered.

Thanks everyone for your comments. You are right i'm going to get the cashmere since i'm 'feelin it' :-) I shouldn't comprimise when spending this much money and it sounds like the problem of getting dirty isn't that bad.
