You can lower it to make it easier to hook up (not as many cranks on the trailer swivel jack), but as soon as you reach a certain speed (17 mph??) the height will go back to "normal"

Like Chip said, you can't override the factory height setting above a certain speed threshold, but the low/high settings can make it easier to hook up the trailer? The rear view camera lets you see what you're backing up to, if you hit the "low" button you may be able to back right under the hitch, then hit the "high" setting, and it may raise up enough to take the weight off the tongue jack, easy peezy!
What the air ride DOES do that's nice for towing, is it will always return to the normal ride height, regardless of tongue weight, so the truck will ride flat (no squat), even with the cargo area full and a trailer hooked on.

Yep. Your headlights won't be blinding oncoming cars, since the air suspension will bring your GX up to standard ride height, despite the 500-600 lb tongue weight being on there.
