I don't know about cold weather package, but if that's important to you look for that.
The performance related options like a spoiler or shocks/spring/ suspension actually are easier to get replaced or modified if that's what you want.
The 300 vs 400/430 refers to the engine (v6, v8) You cannot change that.
The 430 was a replacement for the 400 during the model refresh. It is not a different "trim" exactly just a relabelling after the refresh. But the 400/430 often comes with spoiler and different wheels.

Yup, I agree. I just have to go see these cars more in person rather then looking online as anything can change, really. Thank you.

Even so, any car you buy is going to be 10-15 years old.
So knowing the wear and tear and condition of the car is going to be more important than the trim.
For example, has the upgraded nakamichi sound system? Not going to matter when 3 speakers are buzzy and the LCD display doesn't work.

The condition of the vehicle is going to add way more value than a 15-year-old stereo option. Buy one that's been well kept. It will save you maintenance headaches and help resale value tremendously.
If you find your immaculate GS without the options you want, parts are inexpensive and plentiful. Lots of guys rip out the navigation, factory premium sound, etc. in favor of aftermarket equipment, so you can always upgrade if you want.
As far as GS3 vs. GS4...
If you want to do lots of upgrades and make big power, go with the GS3. A turbo 2JZ is a fantastic engine, can make an absurd amount of power, and there are an endless amount of modifications available. However, if you want to do a couple bolt-on mods and be quicker than most cars on the road, go GS4. There is much less aftermarket support for this engine, though.
