Anyways, I'm definitely a little concerned about the fuel consumption given out by my GS. Currently has 151k on the clock and I have maintained it pretty good.
Has new KN air filter, pcv valve, spark plugs, thermostat, coolant, brake fluid, fuel filter, tires properly inflated, alignment is perfect and I'm getting about 35-45 miles per quarter tank. Right after I changed my fuel filter about 1.5 months ago it got really good and I was getting like 70-80 miles per quarter tank but in the past few weeks it has dropped again. I don't have a CEL because my cats went bad years ago and I popped the bulb and put straight pipes instead of the cats. So I would not know if it was throwing a CEL or not. What I did notice today when I went under the car is that the lines for one of the O2 sensors was completely severed in half, the one farther from the motor. Any ideas as to what's going on here?

hook up a scanner and get CEL reading. If your secondary O2 sensor is split then it's not verifying air/fuel correctly if at all. If the ECU is confused by the O2 readings it may be forcing the car to run rich, which will lower fuel economy.
First thing I would do is check for CEL codes, if you have a O2 code then replace.

^^ Could not agree more, will do this sometime this weekend. I know for a fact the 02 cable is split in half and its just terrible mileage at this point. Im thinking im getting like 11 miles per gallon currently and i would like to boost that up to like 15 or 16.

scan for codes... calculate actual mileage... your method is horribly inaccurate.. fill up the tank.. drive.. fill up again.. divide miles driven by gallons of gas purchased... i would suggest cleaning your MAF with MAF cleaner from CRC... also listen to what the other guys just said.

I'll get a receipt of my next fill up. Usually my gas light comes on at around 280-300miles or so. Then I can still drive a little bit before I fill up. That's around 320 miles and I fill up 16-17gal. That's about 18-20mpg range on my last few fill ups. Mixed local and highway cruising with a good amount of full boost pulls.
