Here you go from Lexus Enthusiast, Update: A couple corrections — the dashboard is covered with NuLuxe (a synthetic leather material), not Leather, and the Saddle Tan interior color is not available in North America.

From my feel test (which is pretty good, in my luxury model GS, the center armrest (in the front, not the rear, thats leather (figure that one out), the door panels, and the main part of the leather dash is nu luxe. The bolsters on the upper seat back are also nu-luxe (likely for longevity), but the entire seat bottom is leather. The very forward part of the dash, the part around the gauges is leather.
I like the stitched dash too, but I too wish it were real. Our Jeep has a beautiful real leather stitched dash and I can tell the difference.

What about the back seat? Is it all leather, including the center armrest?

I believe so, I'll check it today. The armrest is.

And I assume the headrests are leather too? All 5 of them?

I don't know about the headrests in the rear, the headrests in the front are...

The section of the seat that faces the console is Nuluxe. It is leather on the exterior...facing the doors. Not sure of correct terminology, but essentially the sides of the cushion where you are sitting.
Seems like the section of the headrests where your head actually touch is leather, but everything else is not. I can't remember completely on that though. I had to remove the rear headrest for my child seat, and when I re-installed the headrest I vaguely remember which parts didn't feel like leather.
It's weird...my salesman (GX) told me that people actually prefer the Nuluxe to leather. I looked at him like he was from Neptune. That was one reason I did not want the "base" model GX...because it had Nuluxe throughout.

Count me as one of those. I prefer NuLuxe over leather, hands down.

^^^ Realized I'd better explain myself...
I have had leather in past cars and currently have it in my 2013 RX350. I have a full NuLuxe interior in my 2014 IS350. I bought the two cars 5 days apart, just over one year ago.
The leather in the RX looks great, but does show some early wear on the side bolsters, where you can see some creases. I regularly clean it with Leather Masters cleaner and follow up with protectant, as the light gray color seems to invite dye transfer from blue jeans (a ding on the light color, not the leather material).
The NuLuxe in the IS looks exactly the same as the day I bought it. Not a crease, crack, or wrinkle. Maintenance wise, all I've ever done to it is wipe it down with a wet cloth. I also find it to be grippier for spirited driving (obviously not a factor in the RX ). When I have guests with me, they seem surprised when I tell them it's not leather.
So in the end, I find the NuLuxe to be lower maintenance and, at least so far, to wear better than leather. The only thing I miss is the leather smell. Love that in my RX. I'm considering getting a GS, and while it wouldn't stop me from buying one, I do wish they offered them in full NuLuxe.

I got dye transfer from my blue jeans on my Cabernet seats too.
I like that Rioja Red color on the IS better than the GS Cabernet.
