How do you approach finding a fair price to purchase from dealer a 2015 model leftover?
Anyone have experience with pricing a new-old-stock car?

Depends where you are, but I've seen people getting 10-11% off 2016s. Would at least try to get 12-15% if I were you.

I bought a leftover new 2015 GS 350 F-Sport (MSRP $57,785) in late February 2016 for $43,698 (excluding tax, title, and license). So, about 24% below MSRP before tax, title, and license were added. Since it's almost the end of April, I'd aim for at least that much of a discount now.
