I know about the "“Auto Relock Timer” - (Adjust the time elapsed before the automatic door lock function is activated if a door is not opened after being unlocked)" setting.
But where do we set the car to auto-lock when I leave the vehicle? (that would be a good safety precaution - but I didn't realize it was available on the GS)

Correct, if you unlock the car but do not open any door, it will relock in 30 seconds. There is no feature where it automatically locks when you walk away though.
