Choosing between 2 gs300's awd. With or without trac control button?
Both cars are identical exept one does not have the trac off button. What does this mean. Does the car without the button have trac control that just cant be turned off or does it not have trac control at all. Is trac control that big a deal in the awd?

I don't think any AWD model has the trac button... are you sure you're not looking at one that is RWD.
All 3GS have traction control, on the AWD I suppose it is more fundamental to the operation of the drivetrain so they make it difficult to override. You can do it through some complex pedal dance but there is no simple switch like the RWD models have.
