Default Engine Coolant Gauge

So i was driving down the freeway in traffic n constant stop n go after about a mile my coolant temperature gauge kept rising it even went into the red for a bit. so i was rolling along expecting my engine to blow a head gasket or something and nothing after a while it would go down to normal and if im in a stop n go it sky rockets back n forth from half to 100%
when im on the highway getting good air flow the gauge reads fine but its the stop n goes that make the gauge sky rocket as if its not getting enough cooling. im not sure wat the problem mite be i have no leaks but the engine gets really hot so im a lil confused as to what the problem mite be?
any bump steer in the right direction will be highly appreciated. perhaps one of you have experienced a similar problem?
somebody, anybody, HELP!!!!

When that was happening to me it was because of a BHG. It could also be a bad thermostat! Check coolant level and change the thermostat.

was thinking of replacing that along with the water pump

Its wierd cuz after turning the engine off and letting it sit for 2-3 hours the engine is still hot ((Doesnt seem normal if you ask me))

just replace the thermo radiator (upgrade to a alloy one) and water pump and you wont have issues anymore

Might also want to look at the fan clutch.....check it by (with engine off) trying to spin the fan blade counterclockwise by hand. It should have pretty good resistance to not freely spin....if it does spin really free....it probably is causing air-slip.....at the stop/low speed as you indicated.

Well i currently have no fan shroud and the fan blade does have free play like i can spin it both ways n it will do about a full spin before it stops
so perhaps having no shroud is also affecting it???

Yes...the lack of a shroud will affect that....and the blade should have more resistance in counter direction...of course u may have a couple things goin on......thermostat....etc...if the gauge bounces while stopped at stp sign, sounds like sticky t-stat...
