Default Overheating. NEED HELP!!

I have a 92 ES300 and two weeks ago the radiator burst while driving. Steam, water, and coolant all over. So got it replaced and a week later the car got hot and went to 3/4s on the gauge. My mechanic thought it could be this hydraulic fan motor or the thermostat. He wanted me to try and make it run hot again to see what set it off. A week has passed and the gauge reads perfect. I'm suppose to go to Sedona this weekend and it's about a 2 hour drive, I'm kinda worried any thoughts would be great!! Thank you

Take extra coolant...

If you run the car to normal temperature and then just let it sit idle you can easily test the fan motor by looking at it (it should cycle on/off as needed). The thermostat IMHO could be a great guess, they don't last forever and I had a similar issue a few years back on another vehicle.

You could also have air trapped in the system after the radiator replacement. It probably already escaped the system, when it overheated.
