Tire sizes.
I just bought a 2000 ES300 with the 16" rins and 205/60-16 tires. Can I fit 225/55-16 tires on the stock rims without rubbing (especially in the rear)?

Yes.
Here's what the numbers mean:
205/60 means that the width of the tire is 205 mm and the height of the sidewall is 60 % of that.
225/55 is 225 mm and 55 % respectively.
205 X .60 = 123
225 X .55 = 123.75
As you can see the tires are basically the same height, but the 225/55 tire is 20mm (3/4") wider.
Hope this helps,
- J
