Stereo wiring harness, what to do?

Stereo wiring harness, what to do?
Im looking at installing a new head unit into my 1993 ES300, but hopefully keeping the stock amp and speakers (just to save time and money)
I was looking at different ways of going about this, one is comically cheap, and the other is ridiculously expensive.

I may also be installing a mac mini carputer system in place of a head unit (Will post a guide of course!), will either of these be able to use a 3.5mm stereo input after adapters?
I cannot for the life of me find anywhere that says what sort of connections these end up outputting :\
Have a lot of audio experience, but absolutely no car audio experience, so any tips would be greatly appreciated
