Camry has the same engine and runs on regular.
It gets a smidgen less horsepower and torque as a result, but has better fuel economy than the ES even though it's regular vs premium.
The engine is definitely designed for regular also. Move down to mid grade first if you're a little unsure.
Oils are getting very good these days. At the dealer you will save a lot by not going synthetic as they charge quite a premium. If you go to Walmart, you can get Pennzoil Platinum for $20 for 5 qts which is one of the best synthetics out there vs Pennzoil Conventional for $12 for 5 qts which is one of the best conventionals.
Try them both out and see what you like. If you do lots of short trips or driving at high speeds with a heavy load, then the synthetic will do a better job getting you to your 5k change interval and I would recommend that.
If you are doing regular highway driving then all conventionals will get you to 5k safely so the synthetic might be a waste to change out so early.
If you want to go synthetic blend, then the motorcraft is a bargain at $11 at Walmart ie cheaper than most conventional oils.

I own my ES and I do my own oil changes. It gets Amsoil 5W-30 synthetic oil with genuine toyota oil filter.
As for fuel, it gets premium. I use it mainly for peace of mind. I know the engine is the same as in the Camry, but the main concern I have is that the engine software might be programmed for premium only in the ES.
Also I remember reading a post on another forum from an author that claimed that the ES's Japanese made engine has different sized cam lobes than the American made Camry V6, thus requiring its use of premium. However, I am very skeptical of this assertion. I've found no evidence of this.
