You will definately have the upper hand if you are able to sell the 300 instead of using this as a trade in. First you should be able to get a little more for the car by selling it outright. Normally, the dealer will give you wholesale on a trade in and then start juggeling numbers.
Having cash in hand puts you in a better position.

Quite frankly, I think that HP and Torque for the 2007 ES is - finally - just right. I always had an issue with my 2002 ES in this regards, but I am completely satisfied with the 2007's power. For the type of car it is, I really can't see a justification for increasing it. And if you look at the progression of power within the Lexus models, you'll see they got it right too.

I just took possession of my 07 pearl es;
MSRP @ 41600. purchased for 39000
Coming from an MDX, I hope to appreciate a $ difference at the pump (main reason why I traded in the MDX).
Even though I test drove the vehicle, it is going to be an adjustment in windshield size/visibility.
