Steering: Subtle turn left/right, then HOLY CRAP!
Ok, I'm on the back half of my 93 ES rebuild (all of which i'll write up a huge story about later) but I just got a lot of the PITA stuff done that I couldn't do on my own (a/c, steering, alignment, etc)... in anycase I had did the ALMOST complete suspension replacement with: NEW Lower control arms, H&R Springs, KYB struts, Toyota up/low seats, NEW stabilizer links, new CV axles... the only thing that I didnt replace is the the front and rear sway bars and I'm wonderig if thats my problem...
OR
I just got the entire rack and pin replaced as well in which case was totally gone bad when I bought the car at auction (long story)... it was so bad that there was no steering response inbetween 12 o clock and 2:30ish... so I had that totally replaced...
Reason I go thru those 2 things is because I want you guys to think along the same lines as me so for... now for the problem...
Driving the car from the mechanics... I'm going about 50-60 mph down a 2 lane highway which has a number of subtle curves in the road. Its one of those curves that one can easily continue on without braking or keeping braking to a minimum... anyway... when I steer into the turn (very subtle) I feel the car drift toward that direction, which is good.... and then I feel the car JERK in that direction in which I need to hold the steering wheel steady or somewhat inch it back the other way (doing the whole granny pumping turn)... what do you think is the cause or problem of the poor steering in a turn???
Alignment is ok... car drives in a straight line when on a flat even surface.
please let me know your thoughts. Thanks a million.

It sounds like you have worn out steering rack bushings causing loose and imprecise steering response. As for inspection, have someone move the steering wheel back and forth while you watch if the rack is loose on the cross member.
