There are a number of hatches which have sold very well in the U.S. I agree that, overall, in passenger-car lines, the public prefers sedans...but the idea that hatches/wagons won't sell here has been way oversold. Just look at the success of wagons like the Outback, Forester, Venza, Volvo XC-70, etc....
Regarding the A7/S7, I don't think that vehicle is a traditional hatchback in the sense we are talking about with the A3 hatchback. The low slung and coupelike A7 basically has a small, trunkated rear that opens as one piece with the rear window. When I say or think "hatchback," or when we list the last A3, the image of a more upright body comes to mind. Funny though, the lines and boundaries are slowly becoming blurred as time goes on.

drove the A3 2.0T last night at a great event in Houston.
Car was nice except for the base HVAC...granted this is the base version but still...no automatic a/c, no digital readouts, pretty blah.
Plus -- no standard backup cam (even the Honda Civic has this std equip), no standard smartkey (2004 Prius had this as std equip!)
here's the (slightly) better HVAC controls....
