Default bluetooth question again

I know about the problems with Verizon and Lexus. However, I have a question for people who have their phone fully functional. How do you dial a call when in motion? Isn't everything greyed out so that you cannot use address book or dialer (except for one-touch)? I am looking for a workaround for this that won't require rewiring.

If the call-ee ain't on my ONE TOUCH, I just use my cell phone keypad to punch in the number and then [send] the call.

Once it starts to ring, the Lexus takes over and I'm handsfree again.

Taking eyes off the road to do this while driving is, of course, crazy. So it's rare that I must resort to same...and I don't take that risk unless it's a critical call. Like to see if the barber can take me right now. hehe
